Peanut Butter Muffins

1 Chocolate Chip
Scone Mix
1 - 1/2 cups sugar
1 cup creamy peanut butter
1 stick melted butter or margarine |
2 eggs
1/2 cup milk
6 oz. vanilla yogurt
1/2 cup peanut butter chips |
| Heat
oven to 400 degrees F. Paper line 24 muffin cups (1-1/2 inches in
diameter). Empty scone mix into a large bowl, add peanut butter chips
and set aside. In another bowl, stir together: sugar, peanut butter,
butter, eggs, yogurt and milk. Add wet ingredients to scone mix. Stir
gently until dry mix is just moistened. Fill muffin cups about 3/4
full. Sprinkle with sugar. Bake 15 minutes or until lightly browned. |
