Ginger Peach Poached Chicken Salad

4 large chicken breasts
11 tablespoons soy sauce
2 tablespoons Ginger Peach Tea
3/4 cup mayonnaise
1/3 cup each, red & yellow pepper

1 small Granny Smith apple
1 garlic glove, minced
1-1/4 tablespoon minced ginger
1/4 teaspoon ground pepper
Chopped roasted cashews

Place chicken in large pot or dutch oven. Cover with cold water. Add 9 tablespoons soy sauce and Ginger Peach tea leaves. Bring to boil over medium hat. Reduce heat and simmer 20 minutes. Let stand until cool if serving cold. If serving hot, remove immediately. Chop chicken and combine with remaining soy sauce and the remaining ingredients. Chopped cashews may be added if desired.
