Cranberry Raspberry Spinach Salad with Cran-Raspberry Vinaigrette

1 cup TT Cranberry Raspberry Preserves
1/4 cup raspberry vinegar
1 tablespoon honey Dijon mustard
1/2 cup TT Fruity Raspberry Tea

1/2 cup olive oil
Salt & pepper to taste

In a glass bowl, briskly whisk together the preserves, vinegar, mustard, salt and pepper. Slowly stream olive oil into the mixture until incorporated. Then, whisk in 1/2 cup steeped tea. Add dressing to Cranberry Raspberry Spinach Salad! Mix fresh spinach, dried cranberries, raspberries, crumbled feta cheese and walnuts.
